Easy Veggie Egg Bake

12 eggs
1/2 tsp. garlic powder
1/2 tsp. black pepper
1/4 tsp. salt
1.5 cups fresh baby spinach, chopped
1/2 orange or red bell pepper, chopped
1/2 cup cherry tomatoes, quartered
1/4 cup onion, chopped
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese

Whisk garlic powder, salt, and pepper in a large bowl. Stir in remaining ingredients and pour into a 9” x 13” baking dish prepared with non-stick cooking spray. Bake for 40 minutes at 350° F.

Judith Sussman, better known as Judy Blume, was born February 12, 1938, in Elizabeth, New Jersey. She graduated with a B.S. in Education in 1961.
